I admit, I almost missed Taste of Dubai this year – until I saw that my favourite celebrity chef, Tom Aikens, would be there giving cooking demonstrations.
It was just one month ago that I was cooking with Tom at Pots, Pans and Boards. Which was uh-maz-ing!
But he was back in Dubai again this past weekend in the star-studded line-up of chefs at Taste to demonstrate even more of his culinary prowess to an audience of foodies, home cooks and wannabe fangirls, like me.
By the time I arrived to Taste late on the Saturday, Tom had a full house at the Electrolux Chef’s Theatre and was already booked out for his final American Garden and Lurpak Cooking Challenge. I was gutted that I couldn’t participate in the cooking challenge (won’t happen again), but thankfully my friend was quicker off the mark. (Incidentally, she was with me one month ago cooking with Tom too.)
The challenge – to prepare and plate Tom’s signature beef tartare in under 30 minutes, which Tom would then taste and judge. The prize – an American Garden hamper of ketchup and mayonnaise! And as much as I really wanted that prize, this time I was only a spectator.
Step 1 – toast the breadcrumbs. Step 2 – chop the beef. Step 3 – I got distracted again! (Seems to be a common theme!) Something to do with mixing a dressing of mayonnaise, mustard, ketchup, capers, pickles, plus some other ingredients. Step 4 – mix, mix, mix (meat and dressing), arrange it in a round, and top it with a soft egg yolk. Step 5 – putting the finishing touches on. Some carefully placed onions and a sprinkling of toasted breadcrumbs to give it that Michelin-starred crunch. Not detailed enough for you? You can view the recipe here.
And voilà! My friend’s beef tartare looks delightful. I still contend that hers was the best – I mean, this was her second time cooking with Tom – but of course he couldn’t play favourites now, could he?
